We have been staying on a large lake in Zambia. It is over 200 miles long. We took a boat ride last night and watched the sunset. We saw several hippos and one of them surfaced around 25 feet from the boat. We’ve had a lot of technology challenges this week. Cell phones have been out for a day and a half and they are still real spotty. Internet has been down and the only way I have connected was with the World Vision satellite Internet system, which is quite fast but I didn’t have a lot of time to use it. The food has been really good. We have nsima almost every meal. It is similar to grits and made out of corn. We usually start out with soup and then chicken or beef with a salad and nsima. We had canned peaches for dessert with a warm custard over top of them – delicious.
